- Ingredients: 4 bagels, 4 cups of spinach, 4 chopped artichoke hearts, 3/4 cup of oil, 1 egg yolk, 1/2 tablespoon of mustard, juice of one lemon.
- Preparation: Blend the mustard with the lemon juice and the egg yolk at low speed. Add the oil little by little until it is integrated and an emulsion is formed. Season this mayonnaise and reserve. Blanch the spinach. Reserve them for a moment in an ice water bath. Squeeze them carefully with a cloth. Toast the bagels. Distribute the previous mixture on them. Serve.
